When inventory quantity goes to zero in your KlickTrack inventory, it is removed. This is because your inventory only shows what is currently in your store. 

Understanding that inventory managers and inventory buyers need some visibility into items that have sold out, KlickTrack has an 'Inventory Zero' report to capture these items. You can filter this report by any date range to see what was sold out during a specific time frame.
